Hi friends! Here is a recipe that I love! I have tried so many different mixtures in trying to create the simplest, tastiest outline for this dish, and here is what I have landed on!
Recipe Ingredients:
For the chicken marinade:
2 chicken breasts or approximately 28 oz boneless/skinless chicken thighs
1 cup plain yogurt
1.5 Tablespoons minced garlic
1 Tablespoon ginger
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
dash of smoked paprika to taste
For the masala sauce:
1 Tablespoon vegetable/canola oil or pan spray
2 Tablespoons butter
1 yellow or white onion
1.5 Tablespoons minced garlic
1 Tablespoon ginger
1.5 teaspoons garam masala
1 teaspoon turmeric
1.5 teaspoon ground cumin
14 oz tomato puree or tomato paste
1.25 cups heavy cream
1 teaspoon brown sugar
1 teaspoon salt
1 teaspoon chili powder (optional for desired spice level)
Add almond milk in 0.25 cups at a time if the mixture seems too thick
Garnish with fresh cilantro (optional)
Rice (amount as preferred)
These ingredients may sound like a lot! BUT...it really is EASY! Seriously, if this twin mama can do it... you can do it!
There are only a few primary ingredients: yogurt, cream, tomato paste, chicken/potatoes, and spices. If you prefer to make this a vegetarian dish you can substitute the chicken for potatoes.
Instructions:
Slice all the chicken into small bite size pieces.
Mix all the ingredients for the chicken marinade.
Mix chicken in, and let sit for 10 mins minimum, 1 hour preferred, overnight optional.
Next oil a large skillet pan and add chicken pieces to cook. Space them out so they cook fully. Approximately 3 minutes on each side on medium/high heat.
When chicken is fully cooked, set it aside and begin making masala sauce.
Add butter to pan, melt on medium/low heat.
Dice and sauté onion.
Quickly add in spices (I like to put them in a bowl ahead of time so I can throw them all in at the same time). Mix for about 20 seconds, can add a tiny bit of water if needed.
Add in tomato paste, mix around picking up any leftover spices on the pan.
Add cream, mix together.
Add in brown sugar and salt.
Let simmer for 15 mins.
Mix chicken back in
Once all is hot and has a nice texture, serve over rice and garnish.
